I adapted these buttery fruity muffins from Allrecipes.com. I replaced the butter with olive oil and the buttermilk with apple cider. Some customers asked for the recipe. So here it is.

Apple Olive Oil Muffins

Ingredients
- • 2 1/4 cups all-purpose flour
- • One teaspoon baking powder
- • 1/2 teaspoon salt
- • 1 egg
- • 1 cup apple cider
- • 1/2 cup olive oil
- • One teaspoon cinnamon
- • 1 1/2 cups packed brown sugar
- • 2 cups diced Granny Smith or other tart apples
- • 1/2 cup packed brown sugar
- • 1/3 cup all-purpose flour
- • One teaspoon ground cinnamon
- • Two tablespoons olive oil
Instructions
- 1. Preheat the oven to 375F. Grease a 12 cup muffin tin or line with paper muffin cups.
- 2. Combine 2 1/4 cups flour, baking powder, and salt and stir.
- 3. In a separate bowl, mix the egg, 1/2 cup olive oil, cinnamon, and 1 1/2 cups brown sugar. Stir to dissolve sugar. Pour mix into the flour. Sprinkle the diced apple into the bowl as well. Stir until just combined. Spoon into the prepared muffin tin, filling the cups to the top.
- 4. Make the topping: combine 1/2 cup of brown sugar, 1/3 cup flour, and cinnamon. Drizzle with two tablespoons of olive oil while tossing with a fork until well blended.
- 5. Sprinkle this over the tops of the muffins.
- 6. Bake for 25 minutes in the preheated oven, or until the tops of the muffins spring back when lightly pressed.
