April is Earth Month and it’s a great opportunity to learn easy ways to go green in your life. 

Sustainable Lawrence 7th Annual Living Local Expo

I recently demonstrated a few recipes at the Sustainable Lawrence 7th Annual Living Local Expo. If you follow this blog regularly, you know I use local, healthy ingredients to prepare recipes that not only have rich taste but that have health benefits. Local is an easy way to go green. Buy from local farm markets and grocers. This supports the farms and food purveyors and reduces the carbon footprint of food transported to the supermarkets. Quinoa Fruit Salad
Serves 6
Quinoa with blueberries, strawberries, mango, and a refreshing honey lime dressing. This easy and healthy Quinoa Fruit Salad goes well with any summer meal.

  1. • 1 cup quinoa (I used Red Quinoa)
  2. • 2 cups water
Pinch of salt
• For the Honey Lime Dressing
  1. • Juice of 1 large lime
3 tablespoons honey
  2. • 2 tablespoons finely chopped fresh mint
• For the fruit
  1. • 1 1/2 cups blueberries
  2. • 1 1/2 cups sliced strawberries
  3. • 1 1/2 cups chopped mango
  4. • Extra chopped mint, for garnish-optional
  1. 1. Using a strainer, rinse the quinoa under cold water. Add quinoa, water, and salt to a medium saucepan and bring to a boil over medium heat. Boil for 5 minutes. Turn the heat to low and simmer for about 15 minutes, or until water is absorbed. Remove from heat and fluff with a fork. Let quinoa cool to room temperature.
  2. 2. To make the Honey Lime Dressing: In a medium bowl, whisk the lime juice, honey, and mint together until combined.
  3. 3. In a large bowl, combine quinoa, blueberries, strawberries, and mango. Pour honey lime dressing over the fruit salad and mix until well combined. Garnish with additional mint, if desired. Serve at room temperature or chilled.
  4. Note-Use your favorite fruit in this salad. Blackberries, peaches, kiwi, raspberries, pineapple, grapes, etc. are great options!

Lemon Parsley Pesto

  1. • 1/2 bunch parsley, either flat-leaf or curly
  2. • 1/2 garlic clove, peeled
  3. • 1/5 cup stale bread crumbs
  4. • 1 2/3 tablespoons lemon juice
  5. • 2/3 cup olive oil
  6. • 1 level teaspoon finely grated lemon zest
  7. • a pinch of salt
  8. • black pepper (optional)
  1. 1. If you have a food processor, simply put all the ingredients in it and whizz until a paste has formed. Alternatively, finely chop the parsley and garlic and mix in a bowl with the rest of the ingredients. Adjust the seasoning as necessary.
  2. 2. Use immediately or, to store, pour into a sterile jar and top with a little olive oil to seal. This way it will keep for up to 3 weeks in the fridge.

Black And Green Olive Tapenade

  1. • 1 cup Niçoise olives, pitted
  2. • 1 cup small green French olives (Picholine), pitted
  3. • 1/4 cup sundried tomatoes , drained
  4. • 1 tablespoon capers
  5. • 1 garlic clove
  6. • 1 anchovy fillet
  7. • 1/2 tablespoon chopped fresh basil leaves
  8. • 1/2 tablespoon chopped fresh thyme leaves
  9. • 1/2 tablespoon chopped fresh flat-leaf parsley leaves
  10. • 1/4 tablespoon chopped fresh oregano leaves
  11. • 1/4 cup extra-virgin olive oil
  1. 1. In a food processor, combine all the ingredients except the olive oil. Using the pulse button, process until coarsely chopped and well blended. Continue to process, slowly adding the olive oil. Refrigerate in a covered container. Use as needed.
  2. 2. To prepare ahead:
 Tapenade will keep up to 1 week, refrigerated, in a covered container.
