On January 8th, Mrs. G’s hosted the MIDJersey Chamber of Commerce Networking Breakfast where I prepared breakfast potatoes and muffin cup bacon & Eegg soufflés in the Jenn-Air Oven, along with hash browns and a variety of fruits with yogurt. We also included a gluten free section from our friends at WildFlour Bakery & Cafe in Lawrenceville. A few of my recipes are below. They’re great healthy options that you can make ahead of time if you usually eat breakfast on-the-go, or if you need quick and easy options for your family.

Breakfast Potatoes

Ingredients
- • 8 cooked bacon slices*, chopped – *Applewood Smoked, Thick Slice
- • 2 cups shredded cheddar cheese
- • 1/2 cup chopped green onions
- • 1 tablespoon grated fresh ginger
- • 1/4 teaspoon freshly ground black pepper
- • 6 large eggs
- • 4 large egg whites
- • 1 cup low-fat milk
- • 1/4 teaspoon fresh ground sea salt
- • 12 paper baking cups
- • Vegetable cooking spray
Instructions
- 1. Preheat oven to 325°.
- 2. Stir together bacon, shredded cheese, green onions, ginger, and pepper.
- 3. Whisk together eggs, egg whites, milk, and salt in a medium bowl.
- 4. Place paper baking cups in a 12-cup muffin pan, and coat with vegetable cooking spray.
- 5. Divide egg mixture among paper baking cups; top with bacon cheese mixture. Bake 25 minutes or until tops begin to brown. Cool on a wire rack 3 minutes..

Muffin Cup Bacon & Egg Souffle

Ingredients
- • 5 pounds Red Potatoes – I use a mixture of Yukon gold, Red and Fingerling
- • 4 cloves Garlic, Minced
- • 1 whole Onion, Peeled And Roughly Chopped
- • 2 whole Green Bell Pepper, Seeded And Roughly Chopped
- • 2 whole Red Bell Pepper, Seeded And Roughly Chopped
- • 1/4 cup Olive Oil
- • 1/2 stick Butter, Melted
- • 1 teaspoon Seasoned Salt
- • 1/2 teaspoon Cayenne Pepper
- • Kosher Salt And Freshly Ground Black Pepper
Instructions
- 1. Preheat the oven to 425 degrees F.
- 2. In a large bowl, toss together the potatoes, garlic, onion, green bell pepper, red bell pepper, olive oil, butter, seasoned salt, cayenne pepper and some kosher salt and pepper.
- 3. Pour potatoes onto two rimmed baking sheets. Bake for 20 to 25 minutes, shaking the pan twice.
- 4. Raise the heat to 500 degrees and bake until crisp and brown, 15 to 20 minutes, tossing twice.
- 5. Sprinkle with a little more salt and pepper before serving.
