Two Amazing Beer and Bacon Cupcake Recipes

So, if you follow the Appliance Chef and are familiar with Mrs. Gs, you know we try to prepare and post recipes using local, fresh ingredients, minimal processed foods, promote healthy eating and when possible gluten free. 
Well, this past weekend, we got away from that a bit and made some Dad inspired cupcakes in honor of Father’s Day. If you stopped by Mrs. Gs your had a chance to sample my Beer and Bacon cupcakes and enjoy a Jersey staple – Pork Roll, Egg and Cheese Sandwich made on the grill. (cooking eggs on the grill is so easy).

Below are two recipes for Beer and Bacon Cupcakes. I made one batch from a boxed cake mix (I told you we went a bit off track this week), to show a quick and easy way to make this fun cupcake. Then I made a batch from scratch, with a rich dark chocolate and Guinness beer. If you have the time, make the chocolate cupcakes from scratch. They are defiantly worth the indulgence.
* Both of these cupcakes are child safe, as the alcohol content cooks out in the baking process.

  1. Cupcakes
  2. • 1 cup Guinness Beer
 (or any dark stout or bock beer)
  3. • 1 stick butter
  4. • 1/2 cup dark cocoa powder
  5. • 1 cup semi sweet chocolate chips
  6. • 2 cups flour
  7. • 1-1/2 cups sugar
  8. • 1 teaspoons baking soda
  9. • ½ teaspoon baking powder
  10. • 1 teaspoon salt
  11. • 
2 eggs
  12. • 2/3 cup sour cream
  13. • 
1 tsp vanilla extract
  14. Praline Bacon
  15. • 1 pound thick-cut bacon (about 12 slices)
  16. • 3 tablespoons sugar
  17. • 1 1/2 tablespoons chili powder
  18. • 1/4 cup pecans, chopped fine
  19. • Preheat oven to 425°F.
  20. Frosting
  21. • 8oz block cream cheese, softened
  22. • 1 stick butter, softened
  23. • 1 cup powdered sugar
  24. • 2 tbsp maple syrup
  25. • 1 tsp vanilla extract
  1. 1. Preheat oven to 350. Line two muffin tins with cupcake liners and set aside.
  2. 2. In a pot or large sauce pan, simmer the beer and butter on medium until butter is completely melted.
  3. 3. Add cocoa powder and chocolate chips and stir until your mixture smooth. Take off heat and set aside to cool
  4. .
4. In a large bowl, stir eggs and yogurt together until smooth. Slowly add chocolate mixture and vanilla.
  5. 5. Add dry ingredients and stir until well combined.
  6. 6. Bake for 15 minutes. Remove from oven and allow to cool.
  7. 7. Turn oven up to 400, and line a large baking sheet with aluminum foil.
  8. 8. Lay your bacon strips across a baking rack and place the rack on the foil-lined baking sheet. Cook in middle of oven for 10 minutes, or until it just begins to turn golden brown.
  9. 9. In a small bowl stir together brown sugar and chili powder. Remove pan from oven and sprinkle bacon with sugar mixture and pecans. Return pan to oven and cook until bacon is crisp and browned, about 5 minutes. Transfer bacon, praline-sides up, to paper towels to drain.
  10. 10.. While your cupcakes and bacon strips are cooling, start making your frosting. In a large bowl, beat together butter and cream cheese until smooth and well-incorporated.
  11. 11. Add powdered sugar, maple syrup and vanilla. Beat until smooth.
  12. TIP: Add more powdered sugar, as necessary, to achieve desired consistency.
  13. 12. Spoon frosting into a piping bag, and frost each cupcake.
  14. 13. Slice one piece of bacon into ½ -inch strips and press one piece into each frosted cupcake.
  15. 14. Crumble/chop up the rest of the candied bacon and sprinkle them on top of the cupcakes.

  1. • 1 box cake mix (yellow or white)
  2. • egg and/or oil according to box directions
  3. • 1 bottle Amber Lager Beer (anything you have on hand)
  4. • 1 tsp pure vanilla extract
  5. • ½ cup cooked chopped bacon (need about ½ pound of bacon, cooked crisp, then finely chopped)
  6. • ¼ cup good quality maple syrup
  7. • 1 16-oz can vanilla icing (about 2 cups)
  8. • 1 tbsp beer
  9. • Praline Bacon*
  10. • Cupcake liners/wrappers
  1. 1. Preheat oven according to package directions at about 325 degrees.
  2. 2. Mix cake batter according to box directions (add eggs and oil if required) in electric mixer, but swap water for beer.
  3. 3. Add vanilla extract and bacon and beat until combined.
  4. 4. Line cupcake pan with cupcake wrappers and fill about 2/3 full with batter.
  5. 5. Bake according to box direction, which should be at 325 degrees for about 15 minutes or until toothpick comes out clean.
  6. 6. Brush maple syrup on top of each cupcake once removed from the oven.
  7. 7. Ice cooled cupcakes with Cream Cheese Butter Cream Icing (recipe below) or if you are in a rush, 1 16 oz can of Vanilla Icing.
  8. 8. Garnish with Praline Bacon.
